1 1/2 cups cooked chicken
salt and pepper
1 can diced tomatoes
1 Tbl chili powder
1/2 tsp cumin
1/2 tsp onion powder
1 jalapeño seeded and chopped
1 clove garlic minced
1 cup grated cheese
One spaghetti squash cut in half longways. Scrape out all the seeds and strings. Olive oil the fleshy part and bake it facedown on tinfoil on a cookie sheet. Bake at 400 for 45 to 60 min. Remove from the oven and turn over. Use a fork to loosen the squash.
In a separate bowl take chicken, salt and pepper to taste, tomatoes, chili powder, cumin, onion powder, jalapeño, and garlic. Mix and pour half of mixture into each squash. Top with half cup cheese in each squash. Put under broiler until cheese is melted. Remove from oven and top with cilantro and avocado.
Here's some of my grocery haul from earlier today and a pic of my running progress. 2.41 miles in 30 minutes is pretty damn good for me! ♀️ I ran one mile without stopping during this and pushed myself to do sprints.
I also walked the dogs a mile this morning, did the DM (only one set of the lunges though - I'm sore af), the Namabooty video, and 27 squats in a minute.
